The Sankta are definitely a religious people for sure, though it's not really God as much as The Law that the Church of Laterano worships, and getting into details of religion seems like way more than she wants to dive into on a dating show. She's a bare minimum practitioner anyway despite having worked directly with one of the Saints.

Human-like, huh? Well, I can say for sure that Sankta are just humans period. Nothing "like" about us. And as you can see, the wings aren't exactly fluff, the halo is more pink in my case, and I've definitely got a better sense of style than that.
To be completely honest, most of you guys are the ones that look pretty unusual to me. I mean... I guess a lot of Aegir and some Liberi look kind of like you, but unless you've secretly got some tentacles or feathers hidden somewhere, I don't think you're exactly alike.
